I have another scrumptious recipe for you, oh yes! This can be served as an entrée or appetizer, depending on your meal plans. I found this tasty stuffed zucchini recipe over at Kay's lovely blog, Kayotic Kitchen. I made a few substitutions, mostly for dietary purposes (dairy-free sour cream, cumin instead of curry powder and parsley instead of thyme... because I was out!) We had it for dinner the other night and I think it was a winner.
It really is very delicious, though and quite a sinch to make!
